You ask and you shall receive…

Cranberry Nut Muffins
GF muffin mix of your choice (we used King Arthur)
1 C fresh or frozen cranberries, cut them in half and at room temperature
1/2 C chopped nuts (pecans, or walnuts)

Follow the directions on the back of the box with these alternatives for your known allergy…
Eggs–replace with Egg Replacer or applesauce
Butter–replace with non-dairy butter (Earth Balance or coconut oil at room temp.)
Milk–replace with non-dairy milk (Almond, Soy or Coconut milk, all non-sweetened)

If the cranberries have too much moisture then microwave them for 15 seconds to draw it out.
Add cranberries and nuts to mix and bake as directed.
